Chicken Adobo is one of the most iconic dishes in Filipino cuisine. It is known for its rich, savory flavor created by slowly simmering chicken in a mixture of soy sauce, vinegar, garlic, and spices. The result is tender, flavorful chicken coated in a bold, slightly tangy sauce that pairs perfectly with steamed rice. Simple ingredients and slow cooking allow the flavors to develop into a deeply comforting and satisfying dish enjoyed in many different ways across the Philippines but this is my family’s take on it.

Ingredients
800 g chicken thighs or drumsticks
120 g soy sauce
120 g vinegar (cane vinegar or white vinegar)
200 g water
30 g garlic, crushed
2 bay leaves
5 g whole black peppercorns
10 g brown sugar (optional)
15 g vegetable oil
Instructions
1. Marinate the Chicken
In a bowl, combine the chicken, soy sauce, garlic, bay leaves, and peppercorns. Let the chicken marinate for 30 minutes to 1 hour to allow the flavors to develop.
2. Sear the Chicken
Heat vegetable oil in a large pan over medium heat. Remove the chicken from the marinade and sear it for about 3–4 minutes per side until lightly browned.
3. Simmer the Adobo
Pour the marinade into the pan along with the vinegar and water.
Bring the mixture to a gentle boil, then reduce the heat and let it simmer uncovered for 30–40 minutes, or until the chicken becomes tender and the sauce reduces.
Avoid stirring the sauce for the first few minutes after adding the vinegar to allow the acidity to mellow.
4. Adjust the Flavor
Taste the sauce and add brown sugar if you prefer a slightly sweeter balance. Continue simmering until the sauce thickens slightly and coats the chicken.
To Serve
Serve the chicken hot with plenty of sauce over steamed jasmine rice. Garnish with fresh garlic or green onions if desired.
Storage
Chicken adobo keeps very well and often tastes even better the next day.
Store leftovers in the refrigerator for up to 3 days in an airtight container.
Reheat gently on the stove or in the microwave before serving.
