Ingredients

Steak

400 g steak (ribeye, striploin, or sirloin)

8 g salt

3 g black pepper

15 g olive oil

20 g butter

2 cloves garlic, crushed

1 sprig fresh thyme (optional)

Pasta

250 g pasta (fettuccine or spaghetti)

15 g butter

15 g olive oil

20 g garlic, minced

200 g heavy cream

60 g parmesan cheese, grated

4 g salt

2 g black pepper

Optional garnish:

Fresh parsley, chopped

Extra parmesan cheese

Instructions

1. Cook the Pasta

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente.

Reserve about 100 g of pasta water, then drain the pasta and set aside.

2. Cook the Steak

Season the steak evenly with salt and black pepper.

Heat olive oil in a heavy pan over medium-high heat. Sear the steak for about 3–4 minutes per side depending on thickness.

Add the butter, crushed garlic, and thyme to the pan. Spoon the melted butter over the steak while it finishes cooking.

Remove the steak from the pan and let it rest for 5 minutes, then slice into thin strips.

3. Make the Garlic Cream Sauce

In the same pan, melt the butter and olive oil over medium heat.

Add the minced garlic and cook for about 30 seconds until fragrant.

Pour in the heavy cream and bring to a gentle simmer. Stir in the grated parmesan cheese and mix until the sauce becomes smooth.

Season with salt and black pepper.

4. Combine the Pasta

Add the cooked pasta to the sauce and toss until evenly coated. If the sauce is too thick, add a small amount of the reserved pasta water to loosen it.

To Serve

Place the creamy pasta on a plate or bowl. Arrange the sliced steak on top and garnish with fresh parsley and extra parmesan cheese.

Serve immediately while warm.

Storage

Store leftovers in an airtight container in the refrigerator for up to 2 days.

Reheat gently on the stove with a splash of milk or cream to loosen the sauce.
